Perfect pancakes

Here’s a no-nonsense staple for perfect pancakes (and a nice pancakey tune to flip to)…
BASIC PANCAKE RECIPE FOR PANCAKE TUESDAY
* Sieve 115g plain flour into a bowl and add a pinch of salt.
* In a jug mix 200ml milk and 80ml water.
* Make a well in the flour and crack in two free range eggs before beating them into the flour with a fork, whisk or wooden spoon.
* Gradually add the milk and water mix, stirring as you go, to make a smooth liquid. (You can keep the mix in the fridge overnight.)
* Melt some butter in a large frying pan and when the pan is hot drop one small ladle of the mixture into the centre, swirling it round to make your pancake.
* It takes less than a minute to cook before you’re ready to flip.
* Sprinkle or fill your pancake with whatever you like - the traditional lemon juice and (Fairtrade!) sugar, chunks of melted (Fairtrade!) chocolate or cheese and tomatoes for a savoury snack.

I am afraid I’m going to have to disagree and say one egg. You don’t want them turning out like american pseudo-pancakes nonsense.
